
Classic Chicken Noodle Soup
The quintessential comfort soup with tender chicken, vegetables, and egg noodles

Homemade chicken noodle soup is liquid comfort — a clear, golden broth rich with chicken flavor, loaded with tender pieces of chicken, carrots, celery, and curly egg noodles.
The trick to maximum flavor: use bone-in chicken thighs and simmer them in the broth. The bones and skin add richness.
Cook the noodles separately and add to each bowl to prevent them from getting mushy.
Ingredients
- 1.5 lbs bone-in chicken thighs
- 8 cups chicken broth
- 3 large carrots, diced
- 3 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 oz egg noodles
- 2 tbsp fresh parsley
- 1 tsp dried thyme
- 1 tsp salt
Instructions

Place chicken in broth. Bring to a boil, then simmer 20 minutes until cooked through.

Remove chicken. Shred the meat, discard bones and skin.

Add carrots, celery, onion, garlic, and thyme to the broth. Simmer 10 minutes.

Cook egg noodles separately according to package.

Return shredded chicken to the pot. Season with salt and pepper.

Add noodles to each bowl. Ladle soup over and garnish with parsley.
