The secret to a moist meatloaf is a panade — bread soaked in milk that keeps the meat tender. A mix of ground beef and pork adds richness.
Let it rest 10 minutes after baking so it holds together when sliced. Serve with mashed potatoes.
Ingredients
- 2 lbs ground beef (80/20)
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup (for glaze)
- 2 tbsp brown sugar (for glaze)
- 1 tbsp Dijon mustard (for glaze)
- 1 tsp salt

Preheat oven to 350°F. Soak breadcrumbs in milk for 5 minutes.

Combine beef, pork, soaked breadcrumbs, eggs, onion, garlic, Worcestershire, and salt. Mix gently.
