This classic meatloaf is everything comfort food should be — tender, juicy, and topped with a sweet-tangy ketchup glaze that caramelizes in the oven.

The secret to a moist meatloaf is a panade — bread soaked in milk that keeps the meat tender. A mix of ground beef and pork adds richness.

Let it rest 10 minutes after baking so it holds together when sliced. Serve with mashed potatoes.

Ingredients

  • 2 lbs ground beef (80/20)
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tbsp Dijon mustard (for glaze)
  • 1 tsp salt

Instructions

  1. 1

Preheat oven to 350°F. Soak breadcrumbs in milk for 5 minutes.

  2. 2

Combine beef, pork, soaked breadcrumbs, eggs, onion, garlic, Worcestershire, and salt. Mix gently.

  3. 3

Shape into a loaf on a parchment-lined baking sheet.

  4. 4

Mix ketchup, brown sugar, and mustard for glaze. Spread half over the meatloaf.

  5. 5

Bake 50-60 minutes until 160°F internal temp. Apply remaining glaze in the last 15 minutes.

  6. 6

    Rest 10 minutes before slicing.
