
Creamy Mushroom Risotto
Luxuriously creamy Italian rice stirred to velvety perfection with Parmesan

Risotto requires attention but rewards you with the creamiest, most luxurious rice you've ever tasted. The constant stirring releases starch from the Arborio rice, creating a naturally creamy sauce.
Earthy mushrooms, white wine, and a blizzard of Parmesan make this version irresistible.
The final consistency should be loose — it should flow like lava when plated, not hold its shape.
Ingredients
- 1 1/2 cups Arborio rice
- 8 oz mixed mushrooms, sliced
- 1/2 cup dry white wine
- 5 cups warm chicken or vegetable stock
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 3 tbsp butter
- 1 cup grated Parmesan
- 2 tbsp olive oil
- 1 tsp fresh thyme
Instructions

Sauté mushrooms in olive oil until golden. Season and set aside.

In the same pan, cook onion in butter until soft. Add garlic and rice. Toast 2 minutes.

Add wine and stir until absorbed.

Add warm stock one ladle at a time, stirring constantly. Wait until each addition is absorbed before adding the next.

After 18-20 minutes, rice should be al dente and creamy. Stir in mushrooms, Parmesan, and thyme.

Remove from heat. Let rest 2 minutes — it will thicken slightly. Serve immediately.
