
Crispy Homemade Pizza Dough

Great pizza starts with great dough. This recipe produces a chewy, bubbly crust with charred spots and an airy, open crumb.
The key is a long, cold fermentation — mix the dough and refrigerate overnight. The slow rise develops complex flavor impossible to achieve with a quick rise.
A blazing hot oven (as high as yours goes) with a preheated pizza stone or steel is essential.
Ingredients
- 3 1/2 cups bread flour
- 1 tsp instant yeast
- 2 tsp salt
- 1 1/4 cups warm water
- 1 tbsp olive oil
- 1 tsp sugar
Instructions

Mix flour, yeast, sugar, and salt. Add water and olive oil. Mix until a shaggy dough forms.

Knead 5-7 minutes until smooth and elastic.

Divide into 2 balls. Place in oiled containers. Refrigerate 24-72 hours.

Remove from fridge 2 hours before baking. Stretch by hand into circles.
