- 1 tsp lemon zest
- 1/2 cup fresh basil, chopped
- 2 tbsp fresh parsley, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, halved
- 2 cloves garlic, minced

Preheat oven to 425°F (220°C). Toss zucchini, bell pepper, cherry tomatoes, and red onion with 2 tablespoons olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.

Meanwhile, cook orzo in salted boiling water according to package directions until al dente. Drain, rinse briefly with cool water, and transfer to a large bowl.
