This Mediterranean quinoa salad is the perfect meal-prep lunch — hearty, protein-packed, and loaded with fresh vegetables, briny olives, and creamy feta.

Quinoa is a complete protein containing all essential amino acids. Fluff with a fork after cooking and let cool before assembling.

The lemon-herb vinaigrette brightens everything. This salad lasts 5 days in the fridge.

Ingredients

  • 1 1/2 cups quinoa, rinsed
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta
  • 1/4 cup red onion, diced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano

Instructions

    Cook quinoa in 3 cups of water for 15 minutes. Fluff and cool.
