Ingredients
- 1 1/2 cups quinoa, rinsed
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta
- 1/4 cup red onion, diced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano

Cook quinoa in 3 cups of water for 15 minutes. Fluff and cool.

Combine cooled quinoa with tomatoes, cucumber, olives, feta, and onion.

Whisk olive oil, lemon juice, parsley, oregano, salt, and pepper.

Toss salad with dressing. Serve cold or at room temperature.
