
Thai Green Curry
Fragrant coconut curry with vegetables and aromatic green curry paste

Thai green curry is comfort food for the soul — vegetables and protein swimming in a fragrant coconut milk sauce infused with green curry paste, basil, and lime.
Start by blooming the curry paste in oil before adding coconut milk. This intensifies the flavor.
Serve over jasmine rice to soak up every drop of that incredible sauce.
Ingredients
- 2 cans (14 oz) coconut milk
- 3 tbsp green curry paste
- 1 lb chicken or tofu, cubed
- 1 cup bamboo shoots
- 1 red bell pepper, sliced
- 1 cup Thai basil leaves
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 whole lime, juiced
- 1 tbsp vegetable oil
Instructions

Heat oil in a wok. Fry curry paste 1 minute until fragrant.

Add the thick cream from the top of the coconut milk. Simmer 3 minutes.

Add protein and cook 5 minutes. Pour in remaining coconut milk.

Add bamboo shoots, bell pepper, fish sauce, and sugar. Simmer 10 minutes.

Stir in Thai basil and lime juice. Serve over jasmine rice.
