This is the steak marinade that makes people ask "what did you put on this?" — a perfectly balanced blend of soy sauce, Worcestershire, garlic, olive oil, and a touch of balsamic that tenderizes and flavors the meat without overpowering it.
The combination of soy sauce and Worcestershire creates a deep umami base, while the acid from the balsamic and lemon juice gently breaks down the muscle fibers for a more tender result. Fresh garlic and herbs add aromatic complexity that blooms on the grill.
This marinade works on any cut — ribeye, strip, flank, or skirt steak — and only needs 30 minutes to work its magic (though overnight is even better). Mix it in a zip-lock bag, toss in your steaks, and let it do the work.
Ingredients
- 1/3 cup soy sauce
- 1/3 cup olive oil
- 2 tbsp Worcestershire sauce
- 2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 4 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 2 tsp freshly cracked black pepper
- 1 tsp dried rosemary
- 4 thick-cut steaks of your choice

Whisk together soy sauce, olive oil, Worcestershire, balsamic vinegar, Dijon mustard, garlic, lemon juice, pepper, and rosemary in a bowl.

Place steaks in a large zip-lock bag or shallow dish. Pour marinade over the steaks, turning to coat evenly.

Seal and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor. Flip the bag halfway through.

Remove steaks from marinade and pat dry with paper towels. Let them come to room temperature for 20 minutes before cooking. Discard the used marinade.

Grill over high heat for 4-6 minutes per side for medium-rare (135°F internal). Alternatively, sear in a screaming hot cast iron skillet.
