
Whipped Feta Dip with Roasted Tomatoes

Ingredients
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 3 tbsp extra virgin olive oil, divided
- 1 tbsp fresh lemon juice
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 2 tbsp fresh basil, torn
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 1 pinch flaky sea salt

Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tablespoon olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 18-20 minutes until burst and jammy.

While tomatoes roast, add feta, cream cheese, remaining 2 tablespoons olive oil, and lemon juice to a food processor. Blend for 2-3 minutes until completely smooth and creamy, scraping down the sides as needed.

Spread the whipped feta in a shallow serving bowl or plate, creating a well in the center with the back of a spoon.

Spoon the warm roasted tomatoes and their juices into the center of the whipped feta.
