Elderflower syrup is a fragrant, golden concentrate made by steeping fresh elderflower blossoms with sugar, water, and lemon. Diluted with still or sparkling water, it becomes a refreshing summer drink. Mixed with Prosecco, it becomes the famous Hugo cocktail. This recipe is a beloved German and Austrian tradition, made each June when the elderflowers are in bloom.

Ingredients

  • 20 elderflower heads, freshly picked
  • 6 cups water
  • 6 cups granulated sugar
  • 2 lemons, sliced into rounds
  • 1 oz citric acid (available at pharmacies)

Instructions

  1. 1

Gently shake elderflower heads to remove any insects (do not wash — the pollen carries flavor). Place in a large glass or ceramic container.

  2. 2

Bring water and sugar to a boil, stirring until sugar dissolves. Let cool to lukewarm.

  3. 3

Pour the sugar water over the elderflowers. Add lemon slices and citric acid. Stir well, cover, and let steep for 3 days at room temperature, stirring once daily.

  4. 4

Strain through cheesecloth or a fine sieve into clean bottles. The syrup keeps 6 months refrigerated or can be frozen.

Frequently Asked Questions

What is a Hugo cocktail?

Hugo is a popular German/Austrian aperitif: mix 2 cl elderflower syrup with Prosecco, sparkling water, a squeeze of lime, and fresh mint. Served over ice.

Can I skip the citric acid?

Citric acid acts as a preservative and brightens the flavor. You can substitute the juice of 2 additional lemons, but the syrup may not keep as long.
