A nourishing grain bowl with roasted sweet potato, chickpeas, greens, avocado, and tahini dressing.

Ingredients

  • 1 sweet potato, cubed
  • 1 can chickpeas
  • 200 g quinoa, cooked
  • 100 g mixed greens
  • 1 avocado
  • 3 tbsp tahini
  • 1 lemon, juiced

Instructions

    Roast sweet potato and chickpeas with olive oil at 200°C for 25 min.

    Make dressing: whisk tahini, lemon juice, water, salt.

    Build bowls: quinoa, greens, roasted veg, chickpeas, avocado. Drizzle dressing.
