Fresh Middle Eastern parsley salad with bulgur wheat, tomatoes, mint, and a bright lemon-olive oil dressing.

Ingredients

  • 100 g bulgur wheat
  • 200 g flat-leaf parsley, chopped
  • 50 g mint, chopped
  • 3 tomatoes, diced
  • 1 lemon, juiced
  • 4 tbsp olive oil

Instructions

    Soak bulgur in hot water 15 min. Drain and fluff.

    Combine parsley, mint, tomatoes, and bulgur.

    Dress with lemon juice and olive oil. Season with salt.
